- Make the condensed milk: bring the butter, cream and powdered sweetener to the boil in a saucepan, then simmer on low for 30 minutes until thick. Pour into a jar, cool 30 minutes, then chill about 2 hours (it can be made days ahead). 0:55
- Whisk the lime zest with the egg yolks by hand for about 2 minutes until pale green. Stir in the condensed milk, then whisk in the lime juice very slowly in a thin stream so it doesn't curdle. Leave 30 minutes to thicken. 1:56
- For the crust, pulse the almond flour, coconut flour, xanthan gum and salt in a food processor. Add the cold butter cubes, cream cheese, egg and vinegar and pulse just until it comes together. 4:02
- Roll the dough between two sheets of baking paper to 3–6 mm thick and chill 15 minutes. Flip it into the pie plate, peel off the paper, press it in and fold the edges. 4:46
- Bake the crust at 175°C (350°F) for 8 minutes, then cool it 20 minutes and turn the oven down to 165°C (325°F). 5:22
- Pour in the lime filling and bake 15–20 minutes, until the edges are just set and the centre wobbles like jelly. Chill at least 3 hours or overnight to set. 5:31
- Beat the ½ cup cream with 2 tbsp powdered sweetener to stiff peaks and dollop it on the pie. 5:55
Tip. Add the lime juice slowly or the filling curdles. The condensed milk keeps for weeks in the fridge or freezer. Keep the pie chilled; it is rich, so a thin slice goes a long way.

Vitamin A High55%
494 µg a serve, mostly from heavy whipping cream (50%). Keeps eyes, skin and the immune system healthy. Orange vegetables and dark greens give beta-carotene, which the body turns into vitamin A.
Vitamin E High32%
4.8 mg a serve, mostly from almond flour (67%). An antioxidant that protects cell membranes. Nuts, seeds and plant oils such as olive oil are the main sources.
Selenium Source19%
10 µg a serve, mostly from egg yolks (46%). Part of the body's antioxidant enzymes and needed for thyroid hormones. Seafood, eggs, meat and Brazil nuts are rich sources.
Omega-3 Source19%
0.3 g a serve, mostly from heavy whipping cream (59%). Omega-3 fats support the heart and brain. Oily fish give EPA and DHA; walnuts, flax, chia and canola give ALA, which the body converts only a little.
Vitamin B12 Source18%
0.4 µg a serve, mostly from egg yolks (39%). Keeps nerves and blood cells healthy. Found almost only in animal foods and fortified foods (some plant milks, nutritional yeast), so vegans need a reliable source.
