Fermented foods to make at home

Sauerkraut, kimchi, sour pickles, fermented hot sauce, yoghurt, kefir and dishes built on them. Each recipe gives the cook's salt, timing and temperature, keeps the vegetables under the brine and says when to move the jar to the fridge.
