  1. Soften the 2 tbsp butter in a large bowl (about 10 seconds in the microwave), then whisk in the room-temperature eggs, 3 tbsp cream and apple cider vinegar. 0:35
  2. Add the almond flour, coconut flour, erythritol, flax meal, salt, xanthan gum and baking powder and whisk, then add the warm water and mix to a sticky dough. Rest it 5 minutes. 1:08
  3. For the filling, mash the soft butter with the erythritol, cinnamon and stevia into a smooth paste. 2:25
  4. With oiled hands, shape the dough into a ball and roll it between two sheets of baking paper into a rectangle. 3:07
  5. Spread the filling over the dough with your hands, leaving a 2–3 cm (1 inch) strip bare along one long edge. 4:11
  6. Roll up towards the bare edge, lifting with the paper and peeling it away as you go; seal the seam. Cut into 9 with an oiled knife and set them in a greased 20 cm (8 inch) round cake pan. 4:30
  7. Bake at 200°C (400°F) for 5 minutes, then at 175°C (350°F) for another 15–20 minutes, until browned and puffed. 5:27
  8. Whisk the soft butter and cream cheese smooth, then add the powdered erythritol, stevia, a pinch of salt, vanilla and 2 tbsp cream. Spread over the rolls once they have cooled. 6:06

Tip. The dough is sticky, so keep your hands and knife oiled. Double the frosting if you like the rolls well covered. Best eaten warm.

Omega-3 High39%

0.6 g a serve, mostly from golden flax meal (84%). Omega-3 fats support the heart and brain. Oily fish give EPA and DHA; walnuts, flax, chia and canola give ALA, which the body converts only a little.

Vitamin E High26%

3.9 mg a serve, mostly from almond flour (81%). An antioxidant that protects cell membranes. Nuts, seeds and plant oils such as olive oil are the main sources.

Vitamin A Source18%

164 µg a serve, mostly from butter (26%). Keeps eyes, skin and the immune system healthy. Orange vegetables and dark greens give beta-carotene, which the body turns into vitamin A.

Selenium Source14%

8 µg a serve, mostly from eggs (64%). Part of the body's antioxidant enzymes and needed for thyroid hormones. Seafood, eggs, meat and Brazil nuts are rich sources.

Magnesium Source12%

51 mg a serve, mostly from almond flour (66%). Takes part in hundreds of reactions — energy, muscles, nerves, blood sugar and bones. Nuts, seeds, legumes and whole grains are good sources.

Vitamin B12 Source10%

0.2 µg a serve, mostly from eggs (77%). Keeps nerves and blood cells healthy. Found almost only in animal foods and fortified foods (some plant milks, nutritional yeast), so vegans need a reliable source.

Zinc8%

0.8 mg a serve, mostly from almond flour (46%). Needed for immunity, wound healing, taste and growth. Meat, seafood, legumes, seeds and whole grains supply it.

Potassium4%

200 mg a serve, mostly from almond flour (45%). Balances sodium to help control blood pressure and keeps muscles and nerves working. Beans, potatoes, leafy greens and fruit are rich sources.

Folate4%

17 µg a serve, mostly from eggs (42%). Needed to make DNA and new cells — especially important before and in early pregnancy. Legumes and leafy greens are rich sources.

Vitamin B64%

0.1 mg a serve, mostly from eggs (29%). Helps turn food into energy and make brain messengers. Chickpeas, fish, poultry, potatoes and bananas are good sources.

Vitamin D3%

0.6 µg a serve, mostly from eggs (57%). Helps you absorb calcium for bones and supports muscles. Few foods have much — oily fish, eggs, UV-exposed mushrooms, fortified milks. Sunlight is the main source.

Vitamin K2%

2 µg a serve, mostly from ground cinnamon (28%). Needed for blood clotting and bones. Leafy greens and herbs are very rich in it. If you take warfarin, keep your intake steady and talk to your doctor.

Vitamin C0%

0.1 mg a serve, mostly from ground cinnamon (51%). An antioxidant needed for collagen, immunity and iron absorption. Long cooking destroys some, so raw herbs, citrus and capsicum help.
