  1. Pat the fish dry, rub with ½ tsp each of salt and turmeric and leave about 20 minutes. Cut the cauliflower into large florets, the potato into 3 cm wedges, chop the tomato and slit the chillies. 0:18
  2. Heat the mustard oil in a kadai until it smokes gently. Fry the bori, if using, about 20 seconds until golden and lift out. Fry the fish in one layer on medium-low for 2–3 minutes a side until brown and crisp; set aside. 2:05
  3. In the same oil, fry the cauliflower covered on low until browned, adding ¼ tsp each of salt and turmeric halfway; set aside. 2:30
  4. Add the bay leaf, cardamom, cinnamon and cumin seeds, then the potatoes with a pinch of salt; fry covered on low about 5 minutes until browned. Add the tomato and fry 2 minutes. 3:45
  5. Mix the ground cumin, 3 g turmeric, chilli powder and 15 g salt with a little water, add to the pan and braise covered for 3–4 minutes, splashing in water if it dries. Add the ginger paste and fry 3–4 minutes more. 4:38
  6. Return the cauliflower with the green chillies and braise briefly. Pour in the hot water and bring to the boil, then add the fried bori and cook a couple of minutes. 5:22
  7. Slide in the fried fish and simmer about 5 minutes until the vegetables are soft and the jhol thickens slightly. Stir in the sugar (and a sprinkle of atta if it needs thickening), then finish with gorom moshla and coriander. 5:55

Tip. The cook says you can also add sheem (flat broad beans) with the potatoes. Any fresh scaled fish works: rohu, katla, tilapia or sea bass. The 15 g of salt is generous, so add less if you prefer. Serve with steamed rice.

Vitamins & minerals % of a day, one serve · tap for more

Vitamin B12 High117%

2.8 µg a serve, mostly from bhetki fish (100%). Keeps nerves and blood cells healthy. Found almost only in animal foods and fortified foods (some plant milks, nutritional yeast), so vegans need a reliable source.

Selenium High73%

40 µg a serve, mostly from bhetki fish (97%). Part of the body's antioxidant enzymes and needed for thyroid hormones. Seafood, eggs, meat and Brazil nuts are rich sources.

Omega-3 High54%

0.9 g a serve, mostly from mustard oil (68%). Omega-3 fats support the heart and brain. Oily fish give EPA and DHA; walnuts, flax, chia and canola give ALA, which the body converts only a little.

Vitamin B6 High33%

0.6 mg a serve, mostly from bhetki fish (65%). Helps turn food into energy and make brain messengers. Chickpeas, fish, poultry, potatoes and bananas are good sources.

Vitamin C High29%

26 mg a serve, mostly from cauliflower (65%). An antioxidant needed for collagen, immunity and iron absorption. Long cooking destroys some, so raw herbs, citrus and capsicum help.

Iron High22%

3.9 mg a serve, mostly from ground cumin (55%). Carries oxygen in your blood. Iron from plants absorbs better with vitamin C in the same meal — lemon, tomato or capsicum.

Potassium Source17%

820 mg a serve, mostly from bhetki fish (51%). Balances sodium to help control blood pressure and keeps muscles and nerves working. Beans, potatoes, leafy greens and fruit are rich sources.

Magnesium Source15%

64 mg a serve, mostly from bhetki fish (46%). Takes part in hundreds of reactions — energy, muscles, nerves, blood sugar and bones. Nuts, seeds, legumes and whole grains are good sources.

Vitamin K Source14%

17 µg a serve, mostly from coriander leaves (54%). Needed for blood clotting and bones. Leafy greens and herbs are very rich in it. If you take warfarin, keep your intake steady and talk to your doctor.

Folate Source12%

49 µg a serve, mostly from cauliflower (40%). Needed to make DNA and new cells — especially important before and in early pregnancy. Legumes and leafy greens are rich sources.

Vitamin D6%

1.2 µg a serve, mostly from bhetki fish (100%). Helps you absorb calcium for bones and supports muscles. Few foods have much — oily fish, eggs, UV-exposed mushrooms, fortified milks. Sunlight is the main source.
