- Cut the brisket into large chunks and soak in lukewarm water for 6–7 minutes to draw out the blood. Meanwhile slice the radish and onion, and halve the daepa lengthways and cut it into 4–5 cm lengths. 0:05
- Drain and rinse the beef. Put 1.5 litres of water in a pot with the beef, the green tops of one daepa and the kombu. Cover and boil hard for 10 minutes. 1:21
- Lift out the kombu (leave the onion tops), add the radish, lower to medium and simmer 20–25 minutes with the lid ajar so it doesn't boil over, until the beef is tender enough to shred. 2:09
- Lift out the beef and the onion tops. Add the onion, gosari and oyster mushrooms to the broth and let them simmer while you prepare the beef. 2:51
- When the beef is cool enough, shred it along the grain (or slice thinly across it). Mix it with the garlic, cheongju, soup soy sauce, tuna sauce, gochugaru and sesame oil. 3:26
- Add the seasoned beef straight into the boiling soup; the chilli flavours the broth without making chilli oil first. 4:54
- Add the bean sprouts and plenty of daepa, top up with a little water if needed, season with salt and boil once more. Finish with a few shakes of black pepper and serve hot. 5:09
Tip. Serves 5 (our estimate: about 550 g a bowl with 90 g beef). Koreans eat it with rice; on its own it stays low in carbs. Keeps 3 days in the fridge and tastes even better reheated.

Vitamin B12 High95%
2.3 µg a serve, mostly from beef brisket (98%). Keeps nerves and blood cells healthy. Found almost only in animal foods and fortified foods (some plant milks, nutritional yeast), so vegans need a reliable source.
Vitamin K High84%
100 µg a serve, mostly from daepa (82%). Needed for blood clotting and bones. Leafy greens and herbs are very rich in it. If you take warfarin, keep your intake steady and talk to your doctor.
Zinc High70%
7.7 mg a serve, mostly from beef brisket (82%). Needed for immunity, wound healing, taste and growth. Meat, seafood, legumes, seeds and whole grains supply it.
Selenium High43%
24 µg a serve, mostly from beef brisket (84%). Part of the body's antioxidant enzymes and needed for thyroid hormones. Seafood, eggs, meat and Brazil nuts are rich sources.
Vitamin C High42%
38 mg a serve, mostly from gosari (35%). An antioxidant needed for collagen, immunity and iron absorption. Long cooking destroys some, so raw herbs, citrus and capsicum help.
Vitamin B6 High37%
0.6 mg a serve, mostly from beef brisket (43%). Helps turn food into energy and make brain messengers. Chickpeas, fish, poultry, potatoes and bananas are good sources.
Iron High28%
5 mg a serve, mostly from beef brisket (45%). Carries oxygen in your blood. Iron from plants absorbs better with vitamin C in the same meal — lemon, tomato or capsicum.
Magnesium High22%
92 mg a serve. Takes part in hundreds of reactions — energy, muscles, nerves, blood sugar and bones. Nuts, seeds, legumes and whole grains are good sources.
Potassium High21%
970 mg a serve, mostly from beef brisket (27%). Balances sodium to help control blood pressure and keeps muscles and nerves working. Beans, potatoes, leafy greens and fruit are rich sources.
Folate High20%
82 µg a serve, mostly from daepa (31%). Needed to make DNA and new cells — especially important before and in early pregnancy. Legumes and leafy greens are rich sources.
Vitamin A Source19%
175 µg a serve, mostly from gosari (52%). Keeps eyes, skin and the immune system healthy. Orange vegetables and dark greens give beta-carotene, which the body turns into vitamin A.

Vitamin E9%
1.3 mg a serve, mostly from gochugaru (56%). An antioxidant that protects cell membranes. Nuts, seeds and plant oils such as olive oil are the main sources.
Calcium7%
94 mg a serve, mostly from daepa (31%). Builds bones and teeth and helps muscles and nerves work. Dairy, calcium-set tofu, sardines with their bones and some greens supply it.
Omega-36%
0.1 g a serve, mostly from beef brisket (46%). Omega-3 fats support the heart and brain. Oily fish give EPA and DHA; walnuts, flax, chia and canola give ALA, which the body converts only a little.
Vitamin D1%
0.2 µg a serve, mostly from oyster mushrooms (60%). Helps you absorb calcium for bones and supports muscles. Few foods have much — oily fish, eggs, UV-exposed mushrooms, fortified milks. Sunlight is the main source.
