  1. Boil a kettle of water and turn the oven on to 100 °C (212 °F); it stays on through the whole proof. 0:30
  2. Whisk the almond flour, coconut flour, ground flaxseed, ground psyllium husk and baking powder in a large bowl until evenly mixed. Grind whole husks to half their volume before weighing. 0:39
  3. In a small bowl stir the salt and yeast into the very warm water (50–56 °C) until the salt dissolves — the cook finds this warmth wakes the yeast without harming it. 1:18
  4. Pour the vinegar, oil and yeast water into the dry mix, whisk, then knead by hand into a soft dough. 2:32
  5. Shape into a loaf, smoothing the top with wet hands, and set it in a small parchment-lined loaf pan (about 18 × 9 cm), or shape a round boule. Dust with a little flour and cut 3 slashes on top. 3:35
  6. Cover loosely with a dry tea towel, put a dish of boiling water on the bottom of the oven and the dough above it, and proof for 1 hour without opening the door. 5:02
  7. Take out the towel and water dish, set the oven to 180 °C (350 °F) and bake about 1 hour, covering with foil if the top browns too fast, until it is crusty and 96–98 °C inside. 5:17
  8. Lift the loaf from the pan onto a tray and leave it in the switched-off oven for 40–60 minutes so the crumb dries, then cool completely and cut into 20 slices. 6:00

Tip. The loaf cuts into 20 thin slices (the cook's serving is 1 slice). Grain-free, egg-free and dairy-free; it toasts well. Keep it in the fridge or freeze it sliced.

Omega-3 High57%

0.9 g a serve, mostly from golden flaxseed (100%). Omega-3 fats support the heart and brain. Oily fish give EPA and DHA; walnuts, flax, chia and canola give ALA, which the body converts only a little.

Vitamin E High51%

7.7 mg a serve, mostly from almond flour (99%). An antioxidant that protects cell membranes. Nuts, seeds and plant oils such as olive oil are the main sources.

Magnesium High25%

104 mg a serve, mostly from almond flour (78%). Takes part in hundreds of reactions — energy, muscles, nerves, blood sugar and bones. Nuts, seeds, legumes and whole grains are good sources.

Zinc Source12%

1.3 mg a serve, mostly from almond flour (69%). Needed for immunity, wound healing, taste and growth. Meat, seafood, legumes, seeds and whole grains supply it.

Folate Source12%

47 µg a serve, mostly from instant yeast (60%). Needed to make DNA and new cells — especially important before and in early pregnancy. Legumes and leafy greens are rich sources.

Iron Source10%

1.7 mg a serve, mostly from almond flour (64%). Carries oxygen in your blood. Iron from plants absorbs better with vitamin C in the same meal — lemon, tomato or capsicum.

0.1 mg a serve, mostly from almond flour (43%). Helps turn food into energy and make brain messengers. Chickpeas, fish, poultry, potatoes and bananas are good sources.

Selenium6%

3.5 µg a serve, mostly from almond flour (35%). Part of the body's antioxidant enzymes and needed for thyroid hormones. Seafood, eggs, meat and Brazil nuts are rich sources.

Vitamin A0%

0 µg a serve. Keeps eyes, skin and the immune system healthy. Orange vegetables and dark greens give beta-carotene, which the body turns into vitamin A.

Vitamin C0%

0 mg a serve, mostly from golden flaxseed (87%). An antioxidant needed for collagen, immunity and iron absorption. Long cooking destroys some, so raw herbs, citrus and capsicum help.

Vitamin D0%

0 µg a serve. Helps you absorb calcium for bones and supports muscles. Few foods have much — oily fish, eggs, UV-exposed mushrooms, fortified milks. Sunlight is the main source.

Vitamin K0%

0.2 µg a serve, mostly from golden flaxseed (85%). Needed for blood clotting and bones. Leafy greens and herbs are very rich in it. If you take warfarin, keep your intake steady and talk to your doctor.

Vitamin B120%

0 µg a serve, mostly from instant yeast (100%). Keeps nerves and blood cells healthy. Found almost only in animal foods and fortified foods (some plant milks, nutritional yeast), so vegans need a reliable source.
