- Trim the beef and cut it into small cubes (kuşbaşı). The cook uses lean beef from the leg and adds butter later. 1:38
- Seed the kapya, hot green and çarliston peppers and chop them; peel the tomatoes and cut them into cubes the same size as the meat. 2:13
- Put the beef, peppers, tomatoes, peeled garlic cloves and small onions in a large bowl. Add the salt (3 tsp), black pepper (2 tsp), pul biber (4 tsp), the bay leaves and a little olive oil, and mix well. 3:12
- Pack the mixture evenly into three clay jugs (testi), leaving a little space at the top; the cook says three jugs make about six portions. 4:30
- Stir 2 tsp tomato paste into 200 ml (1 glass) water and share it between the jugs. Add a bay leaf and 1 tbsp butter to each. 5:16
- Mix 1 glass (about 200 ml) plain flour with a little water into a stiff dough, divide it in three and press it over the mouth of each jug to seal it (the dough is not eaten). 6:27
- Cook over low coals with the heat around the sides (or in a low oven) for 2–2½ hours. After 20 minutes pierce each seal with a toothpick to let steam escape. 7:02
- Lift out the jugs, crack them open (or pour the stew out of the neck) and serve the meat and vegetables with their juices. 8:23
Tip. No clay jugs? Use a lidded cast-iron pot sealed with foil in a 160°C oven. On camera the cook says 250 g onions and 2 tsp paste (his list: 350 g, 1 tbsp). The salt is generous (1.3 g sodium a serve). Usually served with bulgur pilaf.

Vitamin C High108%
97 mg a serve, mostly from kapya biber (40%). An antioxidant needed for collagen, immunity and iron absorption. Long cooking destroys some, so raw herbs, citrus and capsicum help.
Selenium High90%
49 µg a serve, mostly from lean beef (97%). Part of the body's antioxidant enzymes and needed for thyroid hormones. Seafood, eggs, meat and Brazil nuts are rich sources.
Vitamin B12 High88%
2.1 µg a serve, mostly from lean beef (99%). Keeps nerves and blood cells healthy. Found almost only in animal foods and fortified foods (some plant milks, nutritional yeast), so vegans need a reliable source.
Vitamin B6 High79%
1.3 mg a serve, mostly from lean beef (67%). Helps turn food into energy and make brain messengers. Chickpeas, fish, poultry, potatoes and bananas are good sources.
Zinc High74%
8.1 mg a serve, mostly from lean beef (92%). Needed for immunity, wound healing, taste and growth. Meat, seafood, legumes, seeds and whole grains supply it.
Iron High25%
4.4 mg a serve, mostly from lean beef (71%). Carries oxygen in your blood. Iron from plants absorbs better with vitamin C in the same meal — lemon, tomato or capsicum.
Potassium High23%
1070 mg a serve, mostly from lean beef (46%). Balances sodium to help control blood pressure and keeps muscles and nerves working. Beans, potatoes, leafy greens and fruit are rich sources.
Vitamin A High22%
194 µg a serve, mostly from tomatoes (27%). Keeps eyes, skin and the immune system healthy. Orange vegetables and dark greens give beta-carotene, which the body turns into vitamin A.
Vitamin E High22%
3.3 mg a serve. An antioxidant that protects cell membranes. Nuts, seeds and plant oils such as olive oil are the main sources.
Vitamin K Source19%

Omega-37%
0.1 g a serve, mostly from lean beef (39%). Omega-3 fats support the heart and brain. Oily fish give EPA and DHA; walnuts, flax, chia and canola give ALA, which the body converts only a little.
Calcium6%
75 mg a serve, mostly from lean beef (34%). Builds bones and teeth and helps muscles and nerves work. Dairy, calcium-set tofu, sardines with their bones and some greens supply it.
Vitamin D1%
0.3 µg a serve, mostly from lean beef (59%). Helps you absorb calcium for bones and supports muscles. Few foods have much — oily fish, eggs, UV-exposed mushrooms, fortified milks. Sunlight is the main source.
