- Melt the butter in a saucepan and cook the onion with the cumin seeds until soft, translucent and lightly coloured. 0:36
- Stir in the ginger-garlic paste, turmeric, chilli powder, coriander powder and garam masala and cook for about 2 minutes to take the raw edge off the spices. 1:07
- Add the tomato purée and water, scrape the pan clean, then cover and simmer for at least 10 minutes. 1:41
- Meanwhile brown the paneer pieces on all sides in a dry frying pan and set aside. 2:09
- Uncover the sauce, stir in the kasuri methi, then the cream, and season with salt. Simmer briefly if you want it thicker. 3:06
- Fold in the paneer and garnish with fresh coriander. 3:58
Tip. Portions are modest (the cook says 4); double the paneer for hungry eaters. Blend the onion and use cumin powder for a smooth, restaurant-style sauce. Serve with cauliflower rice to keep it keto.

Vitamin A High27%
244 µg a serve, mostly from paneer (41%). Keeps eyes, skin and the immune system healthy. Orange vegetables and dark greens give beta-carotene, which the body turns into vitamin A.
Vitamin B12 High23%
0.6 µg a serve, mostly from paneer (90%). Keeps nerves and blood cells healthy. Found almost only in animal foods and fortified foods (some plant milks, nutritional yeast), so vegans need a reliable source.
Calcium High21%
273 mg a serve, mostly from paneer (88%). Builds bones and teeth and helps muscles and nerves work. Dairy, calcium-set tofu, sardines with their bones and some greens supply it.
Selenium Source13%
7.1 µg a serve, mostly from paneer (84%). Part of the body's antioxidant enzymes and needed for thyroid hormones. Seafood, eggs, meat and Brazil nuts are rich sources.

Iron6%
1 mg a serve, mostly from cumin seeds (33%). Carries oxygen in your blood. Iron from plants absorbs better with vitamin C in the same meal — lemon, tomato or capsicum.

Vitamin C4%
3.6 mg a serve, mostly from tomato purée (52%). An antioxidant needed for collagen, immunity and iron absorption. Long cooking destroys some, so raw herbs, citrus and capsicum help.
