- Heat the oven to 180°C (350°F). In a large bowl whisk the almond flour, confectioners erythritol, baking powder and cinnamon. 0:50
- In a bigger bowl whisk the eggs, then whisk in the melted butter, almond milk, sour cream, sugar-free maple syrup, banana extract and vanilla. 1:55
- Add the dry ingredients and fold together with a spatula into a thick, smooth batter. 2:54
- Line a 9 × 5-inch (23 × 13 cm) loaf pan with baking paper, spray it lightly and pour in the batter. 3:07
- Scatter the crushed walnuts over the top, or leave it plain. 3:31
- Bake 40–50 minutes, until a toothpick comes out clean from the centre. 3:43
- Let the loaf cool completely in the pan, ideally overnight, before slicing into 10. 3:48
Tip. The cook says resting it overnight makes the biggest difference. Choose a maple-flavoured syrup sweetened with monk fruit or allulose. Any topping works, or none.

Vitamin E High30%
4.5 mg a serve, mostly from blanched almond flour (86%). An antioxidant that protects cell membranes. Nuts, seeds and plant oils such as olive oil are the main sources.
Omega-3 High20%
0.3 g a serve, mostly from crushed walnuts (84%). Omega-3 fats support the heart and brain. Oily fish give EPA and DHA; walnuts, flax, chia and canola give ALA, which the body converts only a little.
Magnesium Source11%
48 mg a serve, mostly from blanched almond flour (84%). Takes part in hundreds of reactions — energy, muscles, nerves, blood sugar and bones. Nuts, seeds, legumes and whole grains are good sources.
Vitamin A Source10%
90 µg a serve, mostly from butter (64%). Keeps eyes, skin and the immune system healthy. Orange vegetables and dark greens give beta-carotene, which the body turns into vitamin A.
Selenium Source10%
5.7 µg a serve, mostly from eggs (81%). Part of the body's antioxidant enzymes and needed for thyroid hormones. Seafood, eggs, meat and Brazil nuts are rich sources.

Vitamin B128%
0.2 µg a serve, mostly from eggs (83%). Keeps nerves and blood cells healthy. Found almost only in animal foods and fortified foods (some plant milks, nutritional yeast), so vegans need a reliable source.
Zinc7%
0.8 mg a serve, mostly from blanched almond flour (61%). Needed for immunity, wound healing, taste and growth. Meat, seafood, legumes, seeds and whole grains supply it.
Calcium6%
75 mg a serve, mostly from blanched almond flour (54%). Builds bones and teeth and helps muscles and nerves work. Dairy, calcium-set tofu, sardines with their bones and some greens supply it.

Potassium3%
160 mg a serve, mostly from blanched almond flour (69%). Balances sodium to help control blood pressure and keeps muscles and nerves working. Beans, potatoes, leafy greens and fruit are rich sources.
Vitamin D3%
0.6 µg a serve, mostly from eggs (60%). Helps you absorb calcium for bones and supports muscles. Few foods have much — oily fish, eggs, UV-exposed mushrooms, fortified milks. Sunlight is the main source.
Vitamin B63%
0.1 mg a serve, mostly from blanched almond flour (37%). Helps turn food into energy and make brain messengers. Chickpeas, fish, poultry, potatoes and bananas are good sources.
Vitamin K1%
0.9 µg a serve, mostly from butter (64%). Needed for blood clotting and bones. Leafy greens and herbs are very rich in it. If you take warfarin, keep your intake steady and talk to your doctor.
Vitamin C0%
0.1 mg a serve, mostly from full-fat sour cream (56%). An antioxidant needed for collagen, immunity and iron absorption. Long cooking destroys some, so raw herbs, citrus and capsicum help.
