- In a bowl, mix the almond flour, cocoa powder and a pinch of salt. 0:40
- Add the coconut oil (or melted butter), 1 tbsp cream, stevia, vanilla and the egg, and whisk until smooth. 0:51
- Pour into a microwave-safe mug or ramekin and microwave for 1 minute for a gooey centre, or 10–15 seconds more for a cakier texture. 1:20
- For the ganache, microwave the chopped chocolate with the butter for 30 seconds, stir until smooth, then stir in 1 tbsp cream and stevia to taste. 1:44
- Pour the ganache over the warm cake and eat straight away. 2:06
Tip. Microwaves vary: start at 1 minute and add 10 seconds at a time. Erythritol, monk fruit or allulose can replace the stevia. Best eaten fresh.

Vitamin C0%
0.2 mg a serve, mostly from heavy cream (50%). An antioxidant needed for collagen, immunity and iron absorption. Long cooking destroys some, so raw herbs, citrus and capsicum help.
