  1. Freeze the strawberries overnight if you like a colder, chunkier shake, then take them out about 30 minutes before blending so they soften a little. 0:51
  2. Put 1 cup strawberries in the blender with ¾ cup unsweetened macadamia or almond milk, ¼ cup heavy cream, 1 tbsp lemon juice, 4 tsp MCT oil and 1 tsp vanilla. 2:02
  3. Add 2 tsp powdered sweetener (or a few drops of stevia) only if your strawberries aren't very sweet. Use a powdered sweetener, not granular. 2:08
  4. Blend until as smooth or as chunky as you like, scraping down the sides if needed, then divide between two glasses. 2:30

Tip. For a thicker shake the cook suggests 1 tbsp chia seeds soaked in half the milk, 1–2 tbsp cream cheese, or a scoop of whey protein (add their carbs). Without the MCT oil it is about 80 kcal lighter a glass.

Vitamin C High52%

47 mg a serve, mostly from strawberries (93%). An antioxidant needed for collagen, immunity and iron absorption. Long cooking destroys some, so raw herbs, citrus and capsicum help.

Vitamin E High20%

3.1 mg a serve, mostly from unsweetened macadamia milk (82%). An antioxidant that protects cell membranes. Nuts, seeds and plant oils such as olive oil are the main sources.

Calcium Source15%

198 mg a serve, mostly from unsweetened macadamia milk (84%). Builds bones and teeth and helps muscles and nerves work. Dairy, calcium-set tofu, sardines with their bones and some greens supply it.

Vitamin A Source14%

124 µg a serve, mostly from heavy cream (99%). Keeps eyes, skin and the immune system healthy. Orange vegetables and dark greens give beta-carotene, which the body turns into vitamin A.

Omega-3 Source10%

0.2 g a serve, mostly from heavy cream (56%). Omega-3 fats support the heart and brain. Oily fish give EPA and DHA; walnuts, flax, chia and canola give ALA, which the body converts only a little.
