- Put 1 tbsp instant coffee powder, 1 tbsp powdered erythritol and 1 tbsp boiling water in a bowl: equal parts of each. It must be instant coffee; brewed coffee or espresso won't whip. 2:04
- Whip with an electric beater until it froths, then turns thick, creamy and lighter in colour, like whipped cream that holds on the bowl. A hand whisk works too but takes several minutes. 3:16
- Pour 50 ml heavy cream into a glass and thin it with a splash of water so it is more like milk. Add ice cubes. 4:17
- Spoon the whipped coffee on top, scraping out every bit, and smooth it over. Stir it into the cold cream before you drink it. 4:59
Tip. The foam is strong and sweet on its own, so mix it in well. For a non-keto version, use milk instead of the cream and water.
The method is a summary in our words — the video shows every step.
