- Set a 700 ml (24 oz) wide-mouth mason jar on a kitchen scale and weigh in the cocoa powder. 0:28
- Add the confectioners erythritol. 1:03
- Pour in the heavy cream and the vanilla; the alcohol in the extract helps keep the ice cream soft. 1:24
- Screw on the lid and shake hard for 3–5 minutes, until the cream thickens and roughly doubles in volume. 1:47
- Freeze for 4–5 hours, giving the jar a good shake every hour for the first 2 hours. It is creamiest the day it's made. 2:00
- If it has been frozen longer than a day, let it stand at room temperature (up to 30 minutes) until it softens, then scoop into 3 portions. 2:42
Tip. Use a 700 ml jar so the cream has room to double. Swap the erythritol for monk fruit or allulose if you prefer.
