- For the sugar-free condensed milk, put the cream, 3 tbsp butter and powdered allulose in a medium saucepan and bring to a boil over medium heat. 1:04
- Turn the heat to low and simmer for about 30 minutes, until it has reduced to roughly 14 oz (400 g) and coats the back of a spoon. 1:26
- Use it straight away, or pour it into a jar, cool 30 minutes at room temperature and refrigerate (it keeps 2–3 weeks). 2:16
- Line an 8-inch (20 cm) square dish with baking paper and wipe the paper with a little oil. 4:45
- Put the condensed milk in a saucepan with the chocolate chips, 1 tbsp butter and salt. Stir constantly over low heat, lifting the pan off the heat now and then so the chocolate doesn't seize, until smooth. 5:24
- Take it off the heat, stir in the vanilla, then pour straight into the dish and smooth the top. 6:28
- Chill for at least 4 hours (overnight is best) until firm, then cut into 32 squares with a sharp knife. 6:44
Tip. For nutty fudge, stir in 1 cup chopped walnuts or pecans with the vanilla. Keep the fudge in the fridge.

Vitamin A8%
74 µg a serve, mostly from heavy whipping cream (84%). Keeps eyes, skin and the immune system healthy. Orange vegetables and dark greens give beta-carotene, which the body turns into vitamin A.
Iron5%
0.8 mg a serve, mostly from sugar-free chocolate chips (98%). Carries oxygen in your blood. Iron from plants absorbs better with vitamin C in the same meal — lemon, tomato or capsicum.
Magnesium3%
12 mg a serve, mostly from sugar-free chocolate chips (91%). Takes part in hundreds of reactions — energy, muscles, nerves, blood sugar and bones. Nuts, seeds, legumes and whole grains are good sources.
Omega-33%
0.1 g a serve, mostly from heavy whipping cream (85%). Omega-3 fats support the heart and brain. Oily fish give EPA and DHA; walnuts, flax, chia and canola give ALA, which the body converts only a little.
Zinc2%
0.2 mg a serve, mostly from sugar-free chocolate chips (83%). Needed for immunity, wound healing, taste and growth. Meat, seafood, legumes, seeds and whole grains supply it.

Vitamin C0%
0.1 mg a serve, mostly from heavy whipping cream (100%). An antioxidant needed for collagen, immunity and iron absorption. Long cooking destroys some, so raw herbs, citrus and capsicum help.
