  1. Heat the oven to 160°C (325°F). Squeeze the ground beef into a ball, then press and turn it into a thick, even round steak with straight sides. 0:09
  2. Season both sides and the edges generously with salt and pepper (roll the edges in the excess), then press a shallow crater into the middle to give the thick patty room to expand. 0:44
  3. Heat a heavy oven-safe pan over medium-high heat until it just smokes. Sear the patty about 4 minutes, until the crust creeps up the sides, then flip and sear the other side about the same. 1:04
  4. Move the pan to the oven for about 6 minutes (for medium), then lift the patty out to rest. 1:38
  5. Put the pan back over medium heat, pour in the beef stock and scrape up the browned bits. Reduce by half, adding the garlic powder if you like. 1:49
  6. Stir in the cream and reduce until the sauce leaves a trail when you drag a spatula through it. Taste for salt and pepper and spoon it over the hamburger steak. 2:11

Tip. Serves 1. Rest the patty while you make the sauce; carry-over heat will take it a little past medium. Leave out the garlic powder for strict carnivore. Bone broth works in place of stock.

Vitamin B12 High198%

4.8 µg a serve, mostly from ground beef (97%). Keeps nerves and blood cells healthy. Found almost only in animal foods and fortified foods (some plant milks, nutritional yeast), so vegans need a reliable source.

Zinc High99%

11 mg a serve, mostly from ground beef (98%). Needed for immunity, wound healing, taste and growth. Meat, seafood, legumes, seeds and whole grains supply it.

Selenium High70%

39 µg a serve, mostly from ground beef (93%). Part of the body's antioxidant enzymes and needed for thyroid hormones. Seafood, eggs, meat and Brazil nuts are rich sources.

Vitamin B6 High39%

0.7 mg a serve, mostly from ground beef (96%). Helps turn food into energy and make brain messengers. Chickpeas, fish, poultry, potatoes and bananas are good sources.

Vitamin A High37%

330 µg a serve, mostly from heavy cream (100%). Keeps eyes, skin and the immune system healthy. Orange vegetables and dark greens give beta-carotene, which the body turns into vitamin A.

Iron High27%

4.8 mg a serve, mostly from ground beef (91%). Carries oxygen in your blood. Iron from plants absorbs better with vitamin C in the same meal — lemon, tomato or capsicum.

0.3 g a serve, mostly from heavy cream (70%). Omega-3 fats support the heart and brain. Oily fish give EPA and DHA; walnuts, flax, chia and canola give ALA, which the body converts only a little.

Potassium Source15%

720 mg a serve, mostly from ground beef (80%). Balances sodium to help control blood pressure and keeps muscles and nerves working. Beans, potatoes, leafy greens and fruit are rich sources.

Magnesium Source12%

Folate5%

21 µg a serve, mostly from ground beef (74%). Needed to make DNA and new cells — especially important before and in early pregnancy. Legumes and leafy greens are rich sources.

Vitamin D3%

0.7 µg a serve, mostly from heavy cream (74%). Helps you absorb calcium for bones and supports muscles. Few foods have much — oily fish, eggs, UV-exposed mushrooms, fortified milks. Sunlight is the main source.

Vitamin C1%

0.5 mg a serve, mostly from heavy cream (96%). An antioxidant needed for collagen, immunity and iron absorption. Long cooking destroys some, so raw herbs, citrus and capsicum help.
